Ingredients
- 3 eggs, large
- (1/2 C) flour, all purpose
- (1/2 C) milk
- 1 Tbs maple syrup
- 1/4 tsp salt
- 1/2 tsp vanilla extract
- (3 Tbs) unsalted butter
- Optional: Confectioner’s sugar
- Optional: fresh berries
Directions
- Preheat oven to 400 F and set rack in middle position. Place 10” cast iron skillet on rack to heat, at least 5 minutes.
- In a blender, combine eggs, flour milk, maple syrup, salt, and vanilla. Blend until completely smooth, scraping down sides of blender as necessary to hydrate all flour. About 30 seconds.
- Open oven door and drop butter into preheated skillet. Close door and allow butter to melt, about 2 mins (DO NOT LET IT BURN).
- Wearing heat protection, carefully remove the skillet and cover handle with something to remind you that it’s hot. Pour batter into butter skillet and carefully place back into the oven.
- Bake about 20 mins, until puffed and golden.
- Remove skillet from oven (COVER HANDLE). Optional: Dust with confectioner’s sugar and top with berries to serve.
Notes
- I have always used my 10” Le Creuset skillet for this and it turns out beautifully.
- I actually prefer to beat this by hand with a whisk. The one time I did it in the Vitamix, it turned out fairly uniform, probably testament to the vigor of the Vitamix motor.
