Ingredients
- 1 tsp yeast
- 3/4 C warm water
- 240 g all purpose flour (2 C)
- 98 g cornstarch (1 C)
- 5 Tbs sugar
- 1/4 C oil
- 2 1/2 tsp baking powder
- 1-2 tsp water
Directions
- Combine water, sugar, yeast in bowl of stand mixer. Allow to sit about 10 mins to activate.
- Add in flour, cornstarch, oil, baking powder. Mix with dough hook 8-10 mins until a smooth ball is formed. Shape lightly. Oil a bowl, turn dough, cover and set aside to rise 1.5-2 hrs. Dough should double in size.
- While you’re waiting, cut out 4″ parchment squares.
- When ready to use: Punch down dough and divide into portions*. Shape and fill, then cover and set aside to rise another 20-30 mins. While dough rises again, set up steamer and start heating the water.
- To cook: Steam for 12 minutes, then remove to a rack to cool. Serve immediately, or cool completely and freeze**.
Notes
*Makes about 16 bao (approx 65g each).
**Reheats nicely from refrigerated for about 20 seconds under a damp paper towel in the microwave. You may want to steam for 4-5 min from frozen.
