Ingredients

  • 1 tsp yeast
  • 3/4 C warm water
  • 240 g all purpose flour (2 C)
  • 98 g cornstarch (1 C)
  • 5 Tbs sugar
  • 1/4 C oil
  • 2 1/2 tsp baking powder
  • 1-2 tsp water

Directions

  1. Combine water, sugar, yeast in bowl of stand mixer. Allow to sit about 10 mins to activate.
  2. Add in flour, cornstarch, oil, baking powder. Mix with dough hook 8-10 mins until a smooth ball is formed. Shape lightly. Oil a bowl, turn dough, cover and set aside to rise 1.5-2 hrs. Dough should double in size.
  3. While you’re waiting, cut out 4″ parchment squares.
  4. When ready to use: Punch down dough and divide into portions*. Shape and fill, then cover and set aside to rise another 20-30 mins. While dough rises again, set up steamer and start heating the water.
  5. To cook: Steam for 12 minutes, then remove to a rack to cool. Serve immediately, or cool completely and freeze**.

Notes

*Makes about 16 bao (approx 65g each).

**Reheats nicely from refrigerated for about 20 seconds under a damp paper towel in the microwave. You may want to steam for 4-5 min from frozen.
