Olive Cheese Balls

Ingredients

  • 2 C shredded cheese (sharp cheddar, etc)
  • 1 1/4 C all purpose flour
  • 1/2 C butter
  • 1/4 tsp cayenne
  • 36 green olives, med to large (Spanish Queen, castelvetrano, etc)

Directions

  1. Drain olives in a colander, rinse, and allow to dry further while you prepare the dough.
  2. Place flour, butter, cayenne, and cheese in a food processor. Pulse until a dough ball forms. Remove the dough ball to a lightly floured surface and knead lightly to bring all the crumbs together.
  3. Pinch off dough in about 2 Tbs amounts, knead lightly and flatten before covering an olive in dough. Set aside, repeat.
  4. When all dough is used up, place on a parchment-lined tray or plate and freeze 30-60 min. At this point, you can move to a freezer-safe ziploc and store for future use.
  5. To bake: Preheat oven to 400 F. Distribute desired number of olive balls on a baking sheet. Bake 15-20 min until lightly browned, cool 5 min before serving. Olives will be hot!

  • 11/3: Used some leftover cake flour mixed with AP for the blend.
