Ingredients

  • 8 Tbs butter (1 stick)
  • 1 C sugar
  • 1 C flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • Spices (optional, see note)
  • 1 C milk
  • 2-3 C fruit

Directions

  • Preheat oven to 350F
  • Melt butter in 1 1/2 qt dish
  • If necessary, cut fruit into bite-size pieces. set aside.
  • Combine flour, sugar, baking powder, salt, whisk together. (Optional: season batter mix with spices such as cinnamon, ginger, cardamom, nutmeg as desired. Up to 2 tsp total.)
  • Stir in milk until mostly smooth (very small lumps ok)
  • Pour into baking dish. Pour fruit into center of batter, do not stir.
  • Bake 45 min to 1 hour, until center is set and a tester comes out clean.
  • Cool before serving.

Notes

  • Frozen fruit is ok as long as the fruit is separate and not one solid mass
  • My standard spice combo is mostly cinnamon, a little ginger and/or nutmeg, and a little cardamom
  • Goes well with ice cream!
