Ingredients
- 8 Tbs butter (1 stick)
- 1 C sugar
- 1 C flour
- 2 tsp baking powder
- 1/4 tsp salt
- Spices (optional, see note)
- 1 C milk
- 2-3 C fruit
Directions
- Preheat oven to 350F
- Melt butter in 1 1/2 qt dish
- If necessary, cut fruit into bite-size pieces. set aside.
- Combine flour, sugar, baking powder, salt, whisk together. (Optional: season batter mix with spices such as cinnamon, ginger, cardamom, nutmeg as desired. Up to 2 tsp total.)
- Stir in milk until mostly smooth (very small lumps ok)
- Pour into baking dish. Pour fruit into center of batter, do not stir.
- Bake 45 min to 1 hour, until center is set and a tester comes out clean.
- Cool before serving.
Notes
- Frozen fruit is ok as long as the fruit is separate and not one solid mass
- My standard spice combo is mostly cinnamon, a little ginger and/or nutmeg, and a little cardamom
- Goes well with ice cream!
