Ingredients

  • 1 c. AP flour (can sub 1:1 KAF GF flour)
  • 1/2 c. unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 c. packed brown sugar
  • 3 large eggs
  • 4 tsp. instant espresso powder
  • 1 teaspoon vanilla extract
  • 4 oz. unsweetened chocolate, chopped
  • 4 tbsp. unsalted butter
  • 1/2 c. granulated sugar
  • 1/2c. confectioners sugar

Directions

  1. ⁠Oven at 325. Whisk together flour, cocoa, baking powder, baking soda, and salt
  2. ⁠Whisk brown sugar, eggs, and vanilla. Combine chocolate and butter and microwave until melted
  3. ⁠Whisk chocolate mixture into egg mixture. Fold in flour mixture until combined and let sit for 10 minutes.
  4. ⁠Place granular sugar and confectioners sugar into separate shallow dishes. Roll into 2tbsp balls of dough. Drop into granular sugar roll around. Transfer to powdered sugar and roll around.
  5. ⁠Bake cookies one sheet at a time for about 12 minutes.
