Ingredients
- 2 lg ripe bananas, mashed
- 2 eggs, large
- 1 C unsweetened almond milk (or similar)
- 1/4 C maple syrup
- 2 tsp vanilla extract
- 2 C old fashioned oats
- 1/2 C oat flour
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp salt
- 1 C blueberries, divided
Directions
- Preheat oven to 350F. Line a muffin tin with baking cups or spray tin generously.
- In a bowl, combine bananas, eggs, maple syrup, milk, and vanilla.
- In your main mixing bowl bowl, combine dry ingredients (oats, flour, baking powder, cinnamon, salt)
- Add wet ingredients to dry and mix to combine. Fold in 1/2 C blueberries.
- Divide batter equally among muffin cups and top with remaining blueberries.
- Bake 30-35 mins or until tester comes out clean. Fully cool before removing from tin.
