Banana oatmeal muffins

Ingredients

  • 2 lg ripe bananas, mashed
  • 2 eggs, large
  • 1 C unsweetened almond milk (or similar)
  • 1/4 C maple syrup
  • 2 tsp vanilla extract
  • 2 C old fashioned oats
  • 1/2 C oat flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1 C blueberries, divided

Directions

  • Preheat oven to 350F. Line a muffin tin with baking cups or spray tin generously.
  • In a bowl, combine bananas, eggs, maple syrup, milk, and vanilla.
  • In your main mixing bowl bowl, combine dry ingredients (oats, flour, baking powder, cinnamon, salt)
  • Add wet ingredients to dry and mix to combine. Fold in 1/2 C blueberries.
  • Divide batter equally among muffin cups and top with remaining blueberries.
  • Bake 30-35 mins or until tester comes out clean. Fully cool before removing from tin.
