Banana Bread in the Zojirushi

Ingredients

  • 3 eggs, large, beaten
  • 50g (1/4 C) vegetable oil
  • 1 tsp vanilla extract
  • 227g (1 C) ripe banana, mashed
  • 240g (2 C) flour, all purpose
    • (My addition) spice mix (try any combo of cinnamon, clove, allspice, ginger. Anything you would put in pumpkin pie, really.) Approx 2-3 tsp total
  • 3 tsp baking powder
  • 1 tsp baking soda
  • 150g (3/4 C) sugar
  • 1/2 tsp salt
  • (Optional) chopped toasted nuts

Directions

  • Make sure paddles are inserted.
  • Add ingredients as listed, except for the nuts.
  • Install baking pan in bread machine.
    • Settings: CAKE course, LIGHT crust. Press start.
  • When add beeps sound, open lid and carefully scrape down any flour that has accumulated on the sides. Mind the blades. Add nuts, if using.

Notes

  • Original recipe did not use spices but I will add them next time
  • Ages well, almost like the moisture distributes better over time.
