Miso Salmon

You can use this as a marinade but I just put it on the fish right before baking.

Ingredients

  • Salmon (of course)
  • 2 Tbs miso (I use white but red would work)
  • 1 Tbs sake
  • 1 Tbs mirin (or you could use 2 Tbs mirin and skip the sake)
  • 1 Tbs soy sauce
  • 1/4 tsp sesame oil

Directions

  1. Preheat oven to 425. Prep a rimmed baking dish with parchment or foil and place fish skin side down.
  2. Mix all ingredients together, then spread over the fish.
  3. Bake 18-20 mins (start checking after 12 mins). When done, remove from oven and transfer to a baking dish (carryover heat will otherwise continue cooking the fish).
  4. Serve – goes really well with kale salad with picada crumbs.
