Cardamom simple syrup

Yield: 2 cups

Uses: Spiced pomegranate martini, cardamom lemonade, Turkish coffee

Ingredients:

  • 1 C water
  • 1/4 whole green cardamom pods
  • 1 C sugar

Directions

  1. Combine all ingredients in a small or medium saucepan.
  2. Bring to a simmer over medium heat, cover and continue simmering for approx 15 minutes.
  3. Remove from heat and allow to cool completely.
  4. Transfer to a container with a sealing lid and store in refrigerator for 3 days. Strain out cardamom pods, keeps about 3 weeks.

Notes

  • Clearly, you can use just about any spice, particularly the warming ones, to make a flavored simple syrup. Other good candidates:
    • cinnamon (use sticks)
    • nutmeg (try whole but maybe try smashing a whole nutmeg and boil the pieces)
    • ginger (use fresh, not powdered)
  • I wonder if black peppercorns would make a good syrup?
