Ingredients
- About 3 dozen olives (I like castelvetrano but you could use anything; original recipe uses pimento-stuffed Manzanilla), drained well
- 1/2 to 3/4 C all purpose flour
- 1 tsp paprika
- 1/4 tsp table salt
- 4-5 shakes cayenne pepper
- 1/4 C salted butter, softened
- 1/4 lb sharp cheddar cheese, grated
Directions
- Heat oven to 375 F.
- Mix together flour, paprika, salt, pepper, and cheese. Cut in the butter until a soft dough is formed.
- Form balls by either rolling or pinching off a quantity of dough and surrounding each olive. Chill in the refrigerator at least 10 minutes, or freeze.
- When ready to cook, bake 20-25 mins in preheated oven.
Notes
- These freeze beautifully. I recommend making a double batch because everyone devours them.
