Soup In A Blender (Vitamix)

Source: Vitamix; Yield: 3 servings

You should be able to do this in any blender, but bear in mind that you may have to compensate with softer veggies and a longer blend time to make up for the fact that your blender is Not A Vitamix.

Ingredients

  • 1-1/2 C (360 mL) almond milk, or milk of choice
  • 3/4 C (180 mL) vegetable stock
  • 4-1/2 C (405 g) broccoli florets, steamed or roasted
  • 1/8 tsp ground black pepper
  • 1-1/2 C (180 g) cheddar cheese, cut into large chunks

Directions

  1. Place all ingredients into the Vitamix container in the order listed, and secure the lid.
  2. Start the blender on lowest speed until you achieve the surface clover, then increase to high.
  3. Blend for 5 minutes 45 sec, or until heavy steam escapes from the vented lid.

Notes

  • re: milk, stock – you can use any milk or stock you want. I’ve even used dry milk and just compensated the liquid portion with stock or water. You can also omit the milk entirely and just use straight stock.
  • Cheese is completely optional. Actually, it makes a nice garnish along with bacon bits.
  • This is also a good way to use your broccoli stems and reduce kitchen waste.
