
- Tomato paste*
- olive oil
- italian herbs
- miso paste
- chicken broth
- sugar
- salt
- Heat 1-2 Tbs oil in a saucepan
- Add in 1-2 Tbs italian herbs to bloom flavor (~30 seconds)
- Add in 1-2 Tbs miso paste, cook about 30 seconds
- Add tomato paste and chicken broth.
- Note: your tomato base can be a can of crushed tomatoes, a jar of whatever tomato sauce you have lying around, anything (and any combo thereof) will do. You’re going for an objective volume of approx 24-28 oz.
- Bring to a simmer, stirring regularly (if you don’t stir, air pockets form and explode in a supremely annoying manner). Cook approximately 10 minutes until slightly thickened (will thicken further as it cools). Taste and adjust for flavor with sugar and salt.
- Set aside until ready for use on pizza, or transfer to a non-reactive container and refrigerate.
