Mama’s Pizza Sauce

  • Tomato paste*
  • olive oil
  • italian herbs
  • miso paste
  • chicken broth
  • sugar
  • salt
  1. Heat 1-2 Tbs oil in a saucepan
  2. Add in 1-2 Tbs italian herbs to bloom flavor (~30 seconds)
  3. Add in 1-2 Tbs miso paste, cook about 30 seconds
  4. Add tomato paste and chicken broth.
    • Note: your tomato base can be a can of crushed tomatoes, a jar of whatever tomato sauce you have lying around, anything (and any combo thereof) will do. You’re going for an objective volume of approx 24-28 oz.
  5. Bring to a simmer, stirring regularly (if you don’t stir, air pockets form and explode in a supremely annoying manner). Cook approximately 10 minutes until slightly thickened (will thicken further as it cools). Taste and adjust for flavor with sugar and salt.
  6. Set aside until ready for use on pizza, or transfer to a non-reactive container and refrigerate.

Used with: deep dish style pizza
