Amaretti Cookies

Ingredients

  • 2 1/4 C (200 g) almond flour
  • 1 C (200 g) granulated sugar
  • 2 large (60 g) egg whites
  • 1/4 tsp lemon juice
  • 1/2 tsp almond extract
  • Powdered sugar

Directions

  1. Preheat oven to 300 F. Line a baking sheet with parchment.
  2. In a large bowl, whisk together almond flour, sugar, and salt.
  3. In a mixing bowl or stand mixer, whisk egg whites and lemon juice to soft peaks.
  4. Add egg whites and almond extract to dry ingredients and stir until a soft, sticky dough is formed.
  5. Portion dough into 1” balls and roll until smooth. Roll in confectioner’s sugar and place on baking sheet.
  6. Bake 30-35 minutes until just golden brown. Cool on sheet for 5 minutes before transferring to a wire rack to cool completely.
  7. Store in an airtight container.
