Ingredients
- 2 1/4 C (200 g) almond flour
- 1 C (200 g) granulated sugar
- 2 large (60 g) egg whites
- 1/4 tsp lemon juice
- 1/2 tsp almond extract
- Powdered sugar
Directions
- Preheat oven to 300 F. Line a baking sheet with parchment.
- In a large bowl, whisk together almond flour, sugar, and salt.
- In a mixing bowl or stand mixer, whisk egg whites and lemon juice to soft peaks.
- Add egg whites and almond extract to dry ingredients and stir until a soft, sticky dough is formed.
- Portion dough into 1” balls and roll until smooth. Roll in confectioner’s sugar and place on baking sheet.
- Bake 30-35 minutes until just golden brown. Cool on sheet for 5 minutes before transferring to a wire rack to cool completely.
- Store in an airtight container.
